Burgundy Truffle

Tuber uncinatum

An earthy, intense hazelnut-like flavor. Grows in cool, dark places among the high-altitude woods of Macedonia. Its aroma — ranging from garlicky wild mushrooms to toasted hazelnuts — is much stronger than its summer counterpart. Ideal for pasta, risottos, and omelets, raw or gently cooked.

Summer Truffle

Tuber aestivum

Mild, nutty and mushroom-like, becoming more intense as the season progresses. Grows in mycorrhizal symbiosis with oak, beech, hazel, and pine. Best served raw, grated thinly over eggs, risotto, or baked potatoes right before serving.

The rarest and most expensive truffle in the world. A complex, distinctive aroma of garlic, honey, and parmesan cheese-like notes makes it a luxurious addition to any dish. Always grated raw immediately before serving. Grows under oak, hazelnut, linden, and poplar in highly aerated areas.

Bianchetto Truffle

Tuber borchii
